Perfect Mashed Potatoes

Well my perfect mashed potatoes were so good, I forgot to get a picture of the final product—- blogging fail for sure! This recipe is far to good to not share though!

This recipe is designed to make approx 6-8 servings depending on how big of eaters you are feeding.

Start with cleaning and peeling all your potatoes. Then dice your potatoes into approx 1” pieces.

Place all your pieces in a large pot on the stove and October with warm/ hot water. Boil until you can easily break your pieces in half with a fork. The potatoes should almost fall apart when touched.

Drain the potatoes using a colander and place potatoes in a large bowl for mixing. Add in butter, sour cream, cream cheese and 1/2 of the milk.

Start mixing. Continue adding in milk until desired consistency. Add in salt and pepper to taste.

The cream cheese used in these potatoes is the perfect ingredient to help keep the potatoes fresh if you are making them in advance. I made these about an hour in advance today and placed them in the oven on the warm setting. I have also made them in advance and taken them to parties in a crock pot on keep warm in the past and they are just as good as they are fresh!

1/4 cup sour cream

1/4 cup cream cheese

1 cup milk
