      Background

      Anyone who knows me, knows I love a good McDonalds Breakfast! The reality is – it isn’t healthy and is expensive to have often. One of my favorite breakfast dishes there is the Bacon, Egg, and Cheese McGriddle, the flavor of the maple pancake along with the bacon, egg, and cheese is something I have been looking to replicate for a long time. This Bacon McGriddle Breakfast Casserole was just what I was looking for to satisfy my McDonalds craving in the morning.

      Bacon McGriddle Breakfast Casserole Preparation

      This Bacon McGriddle recipe is pretty simple and you may have a majority of the ingredients at home if you make your own breakfasts regularly.

      You can substitute the bacon for sausage, but the bacon is delicious!

      Ingredients you will need include:

      1. Complete pancake mix
      2. Large Eggs
      3. Milk
      4. Shredded Cheese
      5. Cooked and diced Bacon
      6. Maple Syrup
      7. Salt

      Begin with preheating your oven to 350°.

      Next, grease an 11×7 or 8×8 casserole dish (double this recipe for a 9×13 dish if you have a large family or are taking this to a group event). A 11×7 or 8×8 casserole dish serves 6.

      Start mixing the ingredients by combining 3/4 cup of pancake mix, 2 large eggs and 1 cup of milk in a bowl. Whisk until mostly smooth, some lumps are expected and are ok to leave.

      Then add in 2/3 cup of shredded cheese (any kind is ok, I used Colby Jack, since this is what I had in the fridge), 3 strips of cooked, diced bacon, 3 tablespoons of maple syrup, and 1/4 teaspoon of salt. Mix well until all the ingredients are coated in the pancake mix.

      Casserole Baking

      Bake the Bacon McGriddle Breakfast Casserole for approximately 30 minutes or until a toothpick comes out clean from the center.

      Wait approximately 5 minutes after the casserole is out of the oven to cut and serve.

      Serve with additional maple syrup to taste.

      Leftover Reheating

      This Bacon McGriddle Breakfast Casserole is a great make-a-head breakfast. I like to make it on the weekends to take to work during the week. It heats up well in the microwave for a quick and easy weekday breakfast.

      Ingredients
        

      • 3/4 Cup Complete Pancake Mix

      Instructions
       

      • Preheat the oven to 350°.
      • Grease 11×7 or 8×8 baking dish.
      • Combine pancake mix, milk, and eggs in medium sized mixing bowl.
      • Add cheese, bacon, maple syrup, and salt to the pancake mixture.
      • Mix until all ingredients are coated in pancake mixture.
      • Pour and spread evenly into baking pan.
      • Bake for approximately 30 minutes or until a toothpick comes out clean.
      • Let cool for 5 minutes before cutting and serving.
      • Enjoy!

      Notes

      Sausage can be substituted for bacon.

      Freezer breakfast dishes make my morning so much easier! I have made my own English muffin sandwiches and breakfast burritos in the past with a lot of success in avoiding the drive threw! I found this idea several years ago and adjusted to to work for what I needed. These French Toast Sticks keep well in the freezer for 3 months.

      Preparation

      Start with preheating your oven to 375°.

      Then continue with cutting up the Texas Toast in thirds, if you want thinner strips it’s ok to cut them in fourths!

      Setting the bread strips off to the side. It’s time to mix up the dipping batter. I start with cracking all the eggs and beating them up prior to mixing in the milk, vanilla, butter, and cinnamon. Once these are mixed in whisk these ingredients together.

      When the solution is well whisked together you are ready to dip your bread to make your French Toast Sticks! I dip my bread using tongs and make sure my bread is completely covered on all sides prior to placing the dipped sticks on a well greased pan.

      I find it easiest to dip the bread in the mixture with tongs.

      Baking

      I found half a loaf filled two cookie sheets nicely without feeling like I was cramming the french toast sticks too close together. After my pans were full I placed them in the oven for a total of 16 minutes. Make sure to flip them at the 8 minute mark.

      Once the french toast sticks are done cooking they are ready to eat today for breakfast (or dinner if you enjoy breakfast for dinner like we do)! Or you can prepare them for the freezer, let your sticks cook for approximately 20 minutes on the sheet pan prior to placing the whole pan into the freezer for 1-2 hours. Once they are frozen completely remove the french toast sticks from the tray and place them in a freezer Ziplock type bag.

      Reheating

      I recommend to use the oven for reheating, putting the french toast sticks in at 375°. Reheat the sticks for 10 minutes or until they are completely heated through. You can also microwave the sticks if you are in a hurry. Set your microwave for 30-45 seconds on high and enjoy!

      Instructions
       

      • Preheat oven to 375°
      • Grease your cookie sheets and set aside.
      • Slice the Texas Toast into thirds or fourth's. Set aside.
      • Crack eggs into a large mixing bowl, whisk together.
      • Mix in Milk, Vanilla, Butter and Cinnamon.
      • Dip bread strips into mix until well covered, place evenly spaced on cookie sheets.
      • Bake at 350° for 16 minutes until golden brown flipping sticks half way though cooking.
      • Enjoy!
