
So I’ve read about Texas Sheet Cake Cookies, but I’ve never tried my hand at them until this morning. We’ll say the recipe was adjusted along the way from the one I found and I defiantly had to adjust my baking time after my first batch was not done enough, but hopefully they will be enjoyed tonight at a Thanksgiving celebration!

Preheat your oven to 350.
I started with a boxed cake mix, because let’s keep it simple and the less ingredients I have to round up the better! I used a fudge chocolate cake mix. I mixed in the eggs, oil and water. This mix is thick so be aware. I then used a cookie scoop and dipped out the cookies on to trays. I got 30 cookies out of this mix.
Bake the cookies for 8-10 minutes, my first batch didn’t cook long enough, so I extended this time from the time I had found on other recipes. Remove and let cool for 5 minutes on the cookie sheet before moving to a cooling rack or wax paper for icing!
While your cookies are cooking prepare your icing! Melt the butter on the stove top on low with the milk and cocoa powder, then stir in the powdered sugar until smooth.
Spoon icing over cookies and let cool. I then placed my cookies in the fridge to help the icing harden more.

Cake mix
2 eggs
1/3 cup oil
1/4 cup water
Icing
1/2 cup butter
3 tablespoons milk
2 tablespoons cocoa powder
2 1/2 cups powdered sugar
