
Simple meal prepping is a must! This weekend is a little chaotic is baking and cooking so I am making a few things with ground beef, but I won’t be using the whole pound, so for my lunches this week what better to have than this fast and easy Sloppy Joe with the left overs!
Preparation
I start with my ground beef, I brown mine in the microwave with a fantastic device I received as a wedding gift. I am in no way affiliated with pampered chef but this is one product that has saved me so much time and mess over the years! I would recommend it or something similar to brown your meats in! This process takes about 7-8 minutes for a pound of frozen ground beef. Plus no mess of using the stove, you can’t beat that!

Next I drain my excess grease off my browned hamburger and chop it up extra fine. You can leave it chunky if you like, but I prefer small prices. Then set the meat aside. In a medium sauce pan add in the ketchup, mustard, and onion or onion powder, stir until mixed well. Add in the browned hamburger and mix well. You can add extra ketchup and mustard if you want additional liquid/sauce.

Today I used onion powder since I didn’t have any onion at home to chop up or previously chopped up onion in the freezer. The onion or onion powder helps to flavor the Sloppy Joe.
Cooking
After mixing well I set the stove to medium heat and bring the mixture to a boil. Then reduce to simmering for 20-30 minutes. If you use onions instead of onion powder make sure you simmer long enough for your onions to be a texture you like. I generally cook mine longer so my onions are completely cooked and not crunchy.
This recipe is very versatile: you can eat it immediately, place in meal prep containers for quick work lunches, place it in a crock pot for a carry in, or in freezer containers for easy meals in the future.

1 pound ground beef browned
3/4 cup ketchup
1/4 cup mustard
1/2 teaspoon onion powder
1/8 cup chopped onion in lue of onion powder

Ingredients
- 1 lb Ground Beef
- 3/4 Cup Ketchup
- 1/4 Cup Mustard
- 1/2 tsp Onion Powder
- 1/8 Cup Chopped Onion In Lue of Onion Powder
Instructions
- Brown and drain ground beef, set aside.
- Mix ketchup, mustard and onion or onion powder together in a sauce pan.
- Mix in ground beef until well covered.
- Bring sauce to a boil over medium heat.
- Reduce to low heat and simmer for 20-30 minutes or until onions are a desired texture.
